Another Day Another Veggie

Another efffortless day of veganism. I'm honestly astonished how easily this is...

Breakfast:
Avocodo on Ezekiel toast
Decaf with soy

Lunch:
The rest of the quinoa, rice salad from yesterday, which I had to fight the boys for. ;)
Quart of water

Snack:
Apple and whole grain crackers
16 oz. water

Dinner:
Whole wheat pasta with onions, garlic, asperagus, mushrooms, and grape tomatoes
Quart of water

Not one complaint over no meat at dinner. Ha!

I did have 3 squares of dark chocolate this afternoon and it knocked me out for several hours. Becoming more sensitive to sugar?

Phone Blogging...

Turns out I can blog from my phone. Huzzah! Keeping up on accountability posts just got easier.

Breakfast:
Flaxplus cereal (from Costco and very tastey), raspberry soy yogurt, 20 oz. Water with orange juice and oregano oil

Lunch:
2 slices Ezekiel bread toasted with 1/2 an avocado mashed into it with salt and pepper (comfort food), diet lemon lime soda

Dinner:
Quinoa salad with rice and black beans (soooo good), 20 oz. water

Got the salad recipe out FoodDay. I tweeked it a bit. Here's my version in case you're interested.

1/2 c. uncooked quinoa
1, 14 oz. can vegetable broth (divided) OR 2 t. Vegetable Better Than Bullion mixed with 2 c. water
1 1/2 t. cumin (divided)
1/2 c. uncooked brown rice
1/2 c. water
1, 15 oz. can black beans, rinsed and drained
1/2 red onion, diced fine
1/2 red bell pepper, diced fine
1 medium sweet potato, peeled, chopped into 1/2" dice and boiled till tender
2 c. corn, frozen or canned
1 bunch of cilantro cleaned, drained, minced
1/4 c. rice wine vinegar
2 T. olive oil
Salt and pepper to taste

1. Rinse quinoa in a fine sieve.
2. In a small sauce pan combine quinoa, 1 c. vegetable broth, and 1/2 t. cumin. Bring to a boil, cover, reduce to med-low and cook 15-20 minutes, until broth is absorbed. Cool to room temperature.
3. Cook rice the same way as quinoa, adding 1/2 c. to broth.
4. When grains are cool add all other ingredients and toss.

The Processed Food Monkey

Breakfast: 2 slices Ezekiel toast (thin slices, and firm texture= exceptional toast, quality product) with soy butter

Snack: Cliff bar, diet lemon/lime soda, handful of Juanitas tortilla chips, 20 oz. water

Lunch: Szechuan green beans, 20 oz. water

Been on a general graze today. No changes in how I'm feeling. Energy is fine (no slumps yesterday or today). I've read where some people switching over to vegan feel hungry all the time, not me. Not yet anyway.

I've been advised to avoid as much processed food as possible, which, is good advice no matter what kind of diet you follow. The Cliff bar, chips, and diet soda don't exactly qualify as healthful, so lessening the quick grab/quick crap snack food will be a challenge.

Dinner tonight will be at a friend's house. It'll be interesting to see how my social eating habits are effected. Social eating tends to be a downfall for me and any diet as I want to eat what everyone else is eating.

Interesting note: I've not had any caffeine today and no ill effects, no headache, no nothing. Also, no sugar cravings. Weird. My friends Cheryl (the one who has been talking up the vegan challenge to me), said she doesn't have them now either, but well... we'll see if it's temporary. I am bringing dessert tonight. Fox wants ice cream and Bananas Foster, but I'm not sure how that will go over with the 10 children that will be in attendance. I will pick up some soy ice cream for me though, no matter what I end up making/taking.

Vegan Experiment: Day 2

Breakfast: quick oats with almond milk and a couple of tablespoons of mixed nuts, seeds, and dried fruit. Decaf with soy. Surprisingly delicious and filling!

Snack: a handful of cashews and 24 oz. water

Lunch: vegetarian burrito from Whole Foods (forgot to tell him no cheese, so a little slip up there), sparkling water, soy mocha

Snack: square of dark chocolate, handful of cashews, 24 oz. green tea

Dinner: BEAUTIFUL salad... spinach and Romaine topped with peas, kidney beans, baby beets, green onion, peppercinni's, sunflower seeds, mushrooms and balsamic vinaigrette. 24 oz. water.


Groaningly full.


Had a great time at Whole Paycheck with the Umfleet ladies. Purchased many vegan food stuffs to try out. I'll let you know what makes the cut and what doesn't. So far: almond milk= delish. Vosges Black Pearl Bar= goodness, but lacking the flavor punch I long for when a chocolate bar lists wasabi and ginger among it's selling flavor points. Don't think I'll purchase again.

Didn't make it to the gym this morning. Forgot to set the alarm and the cat (who thinks he's a furry alarm) didn't start meowing until 6 (too late). The boys are having a house guest over tonight and I'll be running around with them so... gym tomorrow. Most definitely.

Received encouragement and warnings from an old high school chum who has been on the vegan bandwagon for 2 years now (in fact I think now she's gone full raw) and she was full of wonderful tips (turns out she's a nutritional councilor) and a warning that I may hit a wall. She said many go through it, like a drug addict trying to kick a habit. Well, so far so good. No DT's, but there's always tomorrow. ;)

Egad!

Blog dark for over a month! That's because I've been lazy. Not just lazy about blogging, but about this health thing as well. I was trucking along with my work outs then BLAM! I got sick and it sidelined me for two weeks, the there were family and friends visiting and catering and well, the whole month of March has been scary busy. So diet-schmiet! If no exercise then why diet and watch water intake? Pass the pastry please?

I have gained back all my weight. Lame sauce. Sad face. Favorite expressions of grief and sadness used by the tots, but I am more disturbed by my lack of exercise then by the weight gain. So tomorrow I'm heading back to it. This time there must be more rest. My mother-in-law was full of admonitions when she visited at the height of my fever, nasal dripping, sore joint-ness. Clearly I got sick because I didn't get enough sleep. Fine then.

I also feel pretty craptastic with all the "holiday" food choices I've been making. I have a friend I cater with who has been on a vegan cleansing diet. She's dropped weight and looks all glowy and has made a lot of good arguments for trying out the diet. I'm not a convert, but feel bad enough to give it a shot (at least for today).

Breakfast: Breakfast reds and a fruit plate from Jay's and black coffee (potatoes= good, fruit plate= epic fail. Jay's not vegan friendly. Shocker, I know), friends were leaving town and we met with the Skaggs' for breakfast.

Lunch: quinoa tabboleh, 20 oz. water with orange squeezings and some Oregano oil (another thing the MIL thinks will make me feel better and I can mask most it's pizza flavoring with the juice of one orange).

Snack: hummus and a few pita triangles (the pita is most likely not vegan friendly. Meh. Baby steps.) and more water and a diet lemon/lime soda.

Dinner: ??? we'll see... but so far so good. I feel pretty good, but we'll see what happens when the chocolate/cheese cravings hit.
